Generally taken from harder working parts of the lamb, most of these cuts do require longer, slower cooking, but as this yields tender, flavourful results, they should definitely not be overlooked. Often overlooked, lamb’s liver and kidneys are nutritious and very economical, and can be absolutely delicious when cooked with care in dishes such as Devilled Kidneys or the classic Liver & Onions.
